Hello everyone!

I know I haven’t written about any gluten-free items in a while, but yesterday I picked up Schar’s baguettes (it comes 2 to a package) at the local grocer. I decided to try it last night – big mistake! It was so delicious I ended up eating one baguette – it was that good!

Today I went out around 3.10 p.m. It was sunny and 47°F, with a humidity of 26 percent, a dew point of 14°F, and winds NNE at 14 mph (wind chill of 41°F). I wore a short-sleeved t-shirt under my jacket, but I did take along my fingerless gloves because of the wind.

I walked for 2 minutes,
ran for 22 minutes,
then walked home for a total of 25 minutes.

Run time: 22 minutes

Walk time: 3 minutes


Saturday, May 16

This morning I participated in the Fourth Annual Mid-Hudson Walk for Celiac Disease. The walk begins on the Highland side of the Hudson River. We began walking around 9.45 a.m. It was cloudy to begin with, but then the sun broke through. It was around 60 to 65 degrees F. We walked for 3 miles (at least) on the Walkway Over the Hudson. Apparently, this year the Walkway is having a Boston-qualifier marathon in June (I’m not there yet, though!).

I got some pumpkin bread and farmer’s bread (both gluten-free) from Meredith’s Bread. The pumpkin bread sample was heavenly! Schar was also represented, and I got plenty of coupons for their products! Remember, Schar’s GF croissants are coming to New York state in June!

I only remembered to take pictures at the beginning of the walk (silly me!). Here is a photo looking north:

The bridge in the photo is the Mid-Hudson Bridge (officially the Franklin Delano Roosevelt Bridge, but no one calls it that!).

Sorry, couldn’t resist!

Yesterday I went to church and then drove a half hour to a camp, where our church’s 7th and 8th grade Sunday school classes were having a retreat. I played piano for their morning service. The good thing about this is that I was close to my favorite health food store. Their gluten-free selection is vast, and their prices are on the whole cheaper than the grocery store. Yum yum! GF pierogis! GF ravioli!

Also yesterday, I took a rather long nap (insomnia from the night before) and didn’t get my run in. The weird thing is that I woke up terrified. Has that ever happened to you? I don’t recall it happening to me, at least in the near past.

It’s very warm this week, with temps in the 80s, so I’m running later in the day. I went out around 5.50 p.m. It was sunny, breezy, and 84 degrees F, with a humidity of 19 percent. Everything is blooming, so there is lots of pollen in the air, too!

I walked for 4 minutes;
ran for 28 minutes;
then walked home for a total of 35 minutes.

Run time: 28 minutes

Walk time: 7 minutes

I spent most of the day today cleaning the house. My husband has been in England and is coming home this week. I have been enjoying the solitude very much! 🙂

On a recent visit to my local grocer’s, I discovered this goodie: Texas Toast gluten-free croutons. You can view them here. I haven’t tried them yet, but I hope to soon!

Finally, I bought the following cookbook this past week: Nicole Hunn, Gluten-Free on a Shoestring: 125 Easy Recipes for Eating Well on the Cheap (Da Capo Lifelong Books, 2011). The one thing that I love about this book is that the ingredients are simple. I’m sure you know – a lot of books have complicated ingredient lists for GF recipes. Nicole Hunn started her blog six years ago after her son was diagnosed with celiac disease. I think you’ll find her recipes inspiring.

I highly recommend following this website, as the blogger posts wonderful recipes, a lot of which are gluten free!

Meringue layers

  • 1 1/4 cups roasted  salted peanuts
  • 3/4 cup sugar
  • 6 large egg whites
  • 1 tsp lemon juice
  • pinch of salt


  • 1/2 cup  peanut butter
  • 1/4 cup  golden brown sugar
  • 1 cup chilled heavy whipping cream
  • 1 tablespoon caster sugar
  • 1 teaspoon vanilla extract


  • 1/4 cup natural unsweetened cocoa powder
  • 1/4 cup sugar
  • 1 cup heavy whipping cream
  • 200g dark chocolate

For meringue layers:
Preheat oven to 130°C.  Draw three circles with diameter 21 cm on the baking paper.

Finely grind 1 cup nuts with 1/4 cup sugar in processor. Coarsely chop remaining 1/4 cup nuts and set aside.

Using electric mixer, beat egg whites with some salt and lemon juice in large bowl until foamy. With mixer running, gradually add remaining 1/2 cup sugar, beating until meringue is stiff and glossy. Add ground nut mixture and coarsely chopped nuts; fold gently just to blend.
